CHANGING ONE MEAL A DAY CAN BENEFIT YOUR HEALTH AND THE ENVIRONMENT

In May 2012, environmentalist and former actor Suzy Amis Cameron felt her world change. She’d just seen the documentary Forks Over Knives, which advocates eating a whole-food, plant-based diet as a way to avoid or reverse several chronic diseases.

Suzy was so moved by the film, she couldn’t wait for her husband James Cameron (director of Titanic and Avatar) to see it, too. Once he did, the couple made an instant decision to embark on a plant-based diet. Within 24 hours, they’d cleared their house of all animal food products, revamping their pantry and their lives.

A few months later, James and Suzy were strolling along the beach talking about climate change when Suzy recalls James saying, “For the first time in my life, I have hope.” The more people who converted to a plant-based diet, he said, “the more we can move the needle on climate change”.
